Something nice about Lefse

I like to think of this as a Norwegian potato crepe. You can spead things on it to make it sweet or savory, but I love it best warm and lathered in butter.

Instructions

Peel and boils potatoes. Mash potatoes in mixer with butter

Cool

Beat in flour

Scoop out 1” balls and flatten on floured surface with rolling pin. Use plenty of flour so it’s not sticking.

Cook on high on griddle until some browning occurs. Flip and cook other side to match.

Cool and consume with butter and whatever else you think might taste good.
